Meatloaf Muffins

  

Blueberry says: Well, they're not blueberry muffins, but they're still pretty good. A nice dish to make if you're not looking for a whole hefty meatloaf. Makes 3-6 servings, depending on how many muffins you want in your meal.

Ingredients

➜ 1 large egg
➜ ⅓ cup (37 grams) panko breadcrumbs
➜ ¼ cup (60 grams) half and half
➜ 1 tablespoon worcestershire sauce
➜ 1 teaspoon italian seasoning
➜ 1 teaspoon salt
➜ 1 teaspoon garlic
➜ ½ cup (150 grams) and 2 tablespoons ketchup divided
➜ 1 pound ground beef
➜ 1 tablespoon brown sugar


Instructions

  1. Coat a 12 cup muffin tray with cooking spray, and preheat oven to 375°F (190.5°C).

  2. Mix together the egg, panko, half and half, worcestershire sauce, seasonings, and the 2 tablespoons of ketchup into one bowl. Let stand for 5 minutes to moisten.

  3. Add the beef to the bowl and mix well.

  4. Scoop the mixture into 6 muffin wells and flatten the tops.

  5. In a new bowl, stir together the brown sugar and ½ cup of ketchup. Spread 2 teaspoons of this sauce over each muffin.

  6. Bake for 20-22 minutes or until the muffins reach an internal temperature of 160°F (71.1°C).

  7. Remove and let cool for 5 minutes. Best if served immediately afterwards, but can be reheated later if needed.
